One of the things that we like to do is bake Fritters instead of frying them. We have been asked to review the “Art of Cooking” 3 Silicon Baking Mats and have already baked a number of recipes. Yet the texture and consistency of this batter tends to make it stick to most surfaces so I thought that it would be a great way to test this product.

We received 3 mats: 1 large one (16 1/2' x 11 1/2) and 2 are actually of the same size (11 1/2' x 8 1/4’) with the concept that the 2 smaller ones make a complete for a large pan. I myself would have preferred the actual 3 different size mats avoiding the seam that forms by combining the 2 smaller ones. The mats are flexible, Eco-Friendly, 100% Food Grade FDA Approved. We use them and they worked perfectly as nothing did actually stick to the mat, and cleaning was very easy.

The Great Sweet Potato and Zucchini baked Fritters turned out very good and maintained an excellent shape.

Ready in: 55 Minutes (15 Prep - 30 Bake)  |  Serves: 2 - 4  |  Complexity: Easy
Ingredients
  • 1 Sweet Potato, grated
  • 2 large zucchini, grated
  • 2tbsp green onion, chopped
  • 1 Cup whole wheat flour
  • 1 teaspoon salt
  • 2 egg
  • 1/4 Cup milk
  • 1/2 teaspoon pepper

Baked Sweet Potato-Zucchini Fritters - Ready to go into the Oven
  1. Preheat oven at 425° Fahrenheit or 218° Celsius.
  2. Grate sweet potato and steam it for about 8 minutes. Remove from stove, using a kitchen towel squeeze out any liquid . Set aside.
  3. Grate zucchini squeeze liquid and combine with grated sweet potato.
  4. In a separate bowl combine bread crumbs, milk, eggs, salt and pepper. Add to sweet potato and zucchini bowl and mix well.
  5. We used the The Art of Cooking Silicone Baking Mat to place medium size round cakes
  6. Place into the preheated oven for 15 minutes, flip each of the fritters and bake for another 10 minutes or until golden brown.

Serve with your favorite side sauce.
This Baked Sweet Potato-Zucchini Fritters are great as starteres or served as a side dish.

This recipe sounds wonderful. I love that it is baked and not deep fried. I have a couple of these matts and have not used them yet. Sounds and looks like they work great too! Thanks for the great idea.
